BEEF PARES


Ingredients:

2 tbsp cooking oil
1 tbsp minced ginger
1 tbsp minced garlic
1/4 cup soy sauce
1 kg MONTEREY KAMPTO OR BRISKET, cut into chunks
1/4 cup brown sugar
water enough to cover meat
2 pc cinnamon stick
5 pc star anise
1 tbsp sesame oil
2 tbsp cornstarch, dissolved in 2 tbsp water
chopped green onions for garnish
fried garlic, for garnish

Procedure:

  1. In a large pot, heat oil and sauté ginger and garlic in oil for 2 minutes.
  2. Add soy sauce, beef and sugar then stir well. Add water until beef is completely covered. Allow to boil, add cinnamon stick and star anise then reduce to a simmer for at least an hour, or until meat is tender. Add water accordingly if meat is still tough.
  3. When meat is tender, pour in cornstarch mixture. Simmer until sauce slightly thickens.

Makes 4 - 5 servings.
