BEEF AND FRANKS STEW


Ingredients:

2 tbsp olive oil
4 pc PUREFOODS DELI GERMAN FRANKS
1/2 kg MONTEREY BEEF CUBES, 1" thick
1/2 kg MAGNOLIA CHICKEN STATION THIGH FILLETS
1 (100 g) pc white onion, diced
6 cloves garlic, chopped
1 (150 g) pc carrot, peeled and diced
1 (50 g) stalk celery, diced (about 1/2 cup)
1/2 tsp dried thyme
1 pc bay leaf (laurel)
1/2 (120 mL) cup white wine
1 (225 g) cup canned diced tomatoes
1 (250 g) pack tomato sauce
1/2 tsp iodized fine salt
1/8 tsp pepper

Procedure:

  1. In a pot, heat 1 tbsp olive oil and fry franks. Cut into bite size pieces and set aside.
  2. In the same pan, add remaining olive oil and saute beef and chicken.Add onion, garlic, carrot, celery, thyme and bay leaf. Cover and cook over low heat for 10 minutes.
  3. Add franks and wine. Let simmer and then add diced tomato, tomato sauce, salt and pepper. Cover and simmer for 20 minutes, stirring occasionally. Adjust seasoning as needed.

Makes 5 servings.
