BEEF AND BACON CHILI


Ingredients:

4 pc PUREFOODS CLASSIC HONEYCURED BACON
1-1/2 kg MONTEREY BEEF CUBES
1-1/2 cups chopped onions
3 cups beef stock
1 cup kidney beans, soaked overnight
2 cups diced tomato
1 cup tomato sauce
1-1/2 cups corn kernels
2 tsp chili powder
2 tsp sugar
cilantro leaves for topping
1-1/2 cups grated MAGNOLIA CHEDDAR CHEESE

Procedure:

  1. In a medium sauce pot, sauté bacon in its own fat. Add beef and onions. Cook meat until brown in color. Add beef stock and kidney beans. Simmer for 45 minutes to an hour.
  2. Add diced tomatoes, tomato sauce, corn kernels, chili powder and sugar. Cook for another 20 minutes.
  3. Remove from heat and add cilantro. Top with grated cheese just before serving.
Makes 4-5 servings.
