BAKED SPINACH AND CHEESE OMELET


Ingredients:

2 pc medium-sized onions, chopped
5 cloves garlic, chopped
2 tbsp cooking oil
400 g spinach leaves
iodized fine salt and pepper to taste
1/2 cup MAGNOLIA FULL CREAM MILK
1/2 cup MAGNOLIA ALL-PURPOSE CREAM
10 pc medium MAGNOLIA BROWN EGGS, beaten lightly
1/2 pack MAGNOLIA CHEDDAR CHEESE, cubed

Procedure:

  1.  Preheat oven to 375°F.
  2. Sauté onions and garlic in oil until onions are tender. Add spinach and cook until done. Season with a little salt and pepper. Set aside to cool.
  3. When mixture has cooled, add milk, cream and half of the beaten eggs and mix thoroughly. Season with a little more pepper.
  4.  Pour mixture into an 11” x 8 1/2” baking or chafing dish with a 2-1/2” depth. Pour the remaining half of the beaten eggs on top of the spinach mixture and sprinkle the cubed cheese on top.
  5.  Bake for 10 minutes then reduce heat to 350°F and bake for another 10 minutes. Let cool before serving.
Makes 10 servings.
