BAKED MEXICAN BEAN RICE


Ingredients:

1 (225 g) pack DARI CREME CLASSIC
10 slices PUREFOODS COOKED HAM, sliced into 1/2 inch squares
1 cup ready-to-eat chili con carne
1 cup canned red kidney beans, drained
4 cups cooked rice
1 tbsp chopped cilantro (wansoy)
iodized fine salt and pepper to taste
1/2 cup grated MAGNOLIA QUICKMELT CHEESE

Procedure:

  1. Preheat oven to 375°F on broil setting.
  2. Melt margarine in a pan or wok. Pan-fry ham then add chili con carne, and kidney beans.
  3. Add cooked rice and cilantro then season with salt and pepper.
  4. Place rice mixture in an ovenproof serving dish. Top with cheese then bake for 10-15 minutes or until cheese has melted and turned golden brown. Serve immediately.

Makes 5 servings.
