ADOBO RICE STUFFED ROAST CHICKEN


Ingredients:

1 (1.4 kg) whole pc MAGNOLIA CHICKEN
1 tbsp vinegar
2 tbsp cooking oil

Marinade:

1 cup soy sauce
10 cloves garlic, chopped but reserve some for rubbing chicken
1 tbsp cracked peppercorns, reserve 1 tsp for rubbing chicken
2 pc laurel, crushed

Adobo Rice:

2 tbsp cooking oil
4 cloves garlic, chopped
1 (180 g) can PUREFOODS SEXY CHIX ADOBO
2 cups cooked rice

Procedure:

1. Combine marinade ingredients and marinate chicken for at least 1 hour in the chiller, turning chicken every now and then. Drain but reserve marinade. Combine marinade with vinegar and oil. Set aside. 2. Prepare adobo rice by heating oil in a wok or large pan. Sauté garlic then add Sexy Chix and rice. Mix well and cook for 3 minutes. Set aside. 3. Stuff chicken with adobo rice. Seal cavity with a toothpick. Rub chicken with reserved garlic and peppercorns. 4. Roast chicken in a preheated oven or turbo broiler set at 175oC for an 1 hour, basting with marinade mixture every 15 minutes. Turn chicken halfway when using a turbo broiler. Rest for 15 minutes before serving.

 

Makes 6-8 servings. (Yield: 1 whole pc chicken/ 1 pc chicken per serving)
